If you’re looking for a quick and easy midweek dinner recipe which is healthy and full of flavour then my Korean Beef Bowl is for you.

Not only is my beef bowl super tasty and satisfying, it is also a wholesome meal which will keep you full until bedtime.

Inspired by the Korean Bibimbap, this is basically a Korean meal-in-a-bowl with the name meaning “mixed rice”. Typically, your bowl is filled with steamed rice and topped with sliced beef, a variety of sautéed vegetables and soy sauce and chilli pepper paste for some extra heat. Finally, an egg is cracked on top and the diner mixes the egg with the other hot ingredients to complete the dish.

My version of Korean Bibimbap uses the meal-in-a-bowl concept, but uses Curtis Stone’s Korean Recipe Beef Mince to save some time, ideal for busy parents and professionals. Packed with protein, this dish also makes a great post-workout dinner whether you’ve been on a long walk, exercising at the gym or cycling home from work.

Korean Beef Bowl | Serves 2-3 | Easy | 20 minutes

Ingredients

  • 500g Cook with Curtis Korean Recipe Beef Mince
  • ¼ cup (60ml) soy sauce
  • 1 ½ tsp cornflour
  • 1 tsp sesame oil
  • 1/3 cup (80ml) water
  • 2 eggs
  • Handful roasted cashew nuts
  • 1 tsp sesame seeds, toasted
  • 1 red capsicum, sliced
  • 5 Cup mushrooms, sliced
  • 1 bunch pak choy, washed and sliced
  • 1 thumb-sized piece ginger, finely diced
  • 2 garlic cloves, finely diced
  • 1 red chilli, sliced thinly (remove seeds if prefer less spicy)
  • 1 tbsp vegetable oil

To Serve

  • 1 cup steamed jasmine rice
  • 3 spring onions, sliced diagonally
  • Handful of coriander

Method

  1. In a bowl, add the soy sauce, cornflour, sesame oil and 1/3 cup (80ml) water and mix until well combined.
  2. Heat a wok over high heat and add 1 tbsp vegetable oil. Add the garlic and ginger and toss for 1 minute until slightly golden. Add the mince, breaking up into 2cm pieces and stir fry for 3 minutes or until browned.
  3. Add the roasted cashew nuts, capsicum, mushrooms and chilli and cook until just tender.
  4. Add in the pak choy with the soy sauce mixture. Toss all ingredients to evenly coat in the sauce and cook for 1 minute.
  5. When adding the sauce, start frying your eggs in a frying pan and toast the sesame seeds.
  6. Serve immediately in deep bowls with rice, topped with the Korean beef mixture, toasted sesame seeds, fried egg, coriander and spring onions.

Notes

  • Make the dish even healthier by swapping out the Jasmine rice for brown rice
  • Drizzle Sriracha on top for extra heat if you like your meals spicy
  • Change up the vegetables – why not add broccolini, carrots or cucumber
  • Swap out the beef for pork or chicken or try it with tofu for a vegetarian option
